- I'm a chef in Liberty Hill, TX. and I like to cook, make beer, make cheese, create new dishes, cook, mix new beverages, and did I say I like to cook! I'm building many new recipes that are closer to what some people call Paleo, but I refer to as real food. I focus on low carb, high protein, lots of non-starchy vegetables, and don't really worry about fat at all. Following this lifestyle, I've lost 55 lbs of body fat with very minimal amount of exercise. At my most recent physical, my numbers were great. I truly believe common mainstream ideas about nutrition are completely whacked and incorrect.
